There’s one small pizza chain called Beau Jo’s that makes “mountain pies” like they show in the video, but they’re super litigious about anyone even slightly imitating them. They’ve actually trademarked the term “Colorado-style pizza,” thus preventing Colorado from having an actual Colorado-style pizza. Which is a shame because “mountain pies” are far from the best pizza, and it would benefit a lot from some outside innovation.
