Does anyone know if the Game Pass Ultimate version of Starfield (or any other first party game) includes all future DLCs? I am trying to decide if I want to subscribe to Game Pass Ultimate or just buy Starfield outright.

I don’t know specifically about starfield, but most games with DLC on gamepass don’t include it. However, you’re still able to buy the DLC and use it with your subscription (while you’re subscribed).
I don’t think any of the versions include all future DLC, they specifically mention the name of one expansion, but I haven’t seen any wording specifically mentioning all future DLC.
GPU is base game only. As there’s a separate upgrade purchase available for the Premium Edition it’s expected that future DLC follow the same paid path.
The game pass versions of first party games are the standard editions. There is usually an upgrade option to get the ultimate edition which will be the difference between the standard edition price and the ultimate edition price. Which for Starfield is £34.99 and that’ll get you early access on September 1st.
It’s also worth noting with early access that if there is a day one patch that usually comes on release day and not on early access release day.
